remove rez-bind quickstart from docs

rez 'getting started' should remove references to the rez-bind quickstart.

Motivation
We've been saying we want to deprecate/remove rez-bind for a long time, but we haven't fully committed to an alternate approach yet, since REP-002 is not yet completed. at the very least, quickstart, which does not work properly on windows, should be removed from the docs, and should follow the information provided in the below youtube video instead:

Hi, I would be interested in helping with this documentation cleanup issue. I'm new to ASWF contributions but have been using rez for a while, seems like a great one to start with. Is this still available to work on?
