Wrap psr/log in custom namespace

The psr/log version is conflicting with the psr/log version required by roots/acorn. Plugins should always wrap their dependencies in a custom namespace to avoid these kinds of conflicts. See https://roots.io/acorn/docs/compatibility/#compatibility.
