Fluent operator chart for v3.3.0 points to "latest" image tag instead of "v3.3.0"

The "latest" tag is currently broken due to an operator bug, so this will break/is breaking installations.

How has nobody else caught this yet? Installations that don't explicitly configure this are pulling container images built from whatever is on the master branch instead of actual tagged releases.
