How can I extract OpenTelemetry data at the repository, organization, and project levels from GitHub using the Sample-Trace2-Otel-Collector tool?

The tool is designed to capture performance data on Git commands as they run. You can create a custom collector on your local system (and maybe share it with your team/organization) and collect Git perf data in a database or OTEL data store of your choosing. Then you can post-process the data (using whatever tooling your database/data store provides.
