In particular: how-to-access-the-shell-or-ssh-into-pinn and preconfiguring-a-wifi-network

By "Quick-start" are you referring to this: quick-start?

If you don't have a display, you should add forcetrigger ssh vncshare to cmdline.txt and add a wpa_supplicant.conf file for your wifi credentials. You need to access PINN via VNC to access its interface. SSH is useful for maintenance purposes only.
