ci: Ignore doc date-only changes

This is a tentative at getting less useless Auto generate docs commits with only a date change 🤔

Ahh good idea, so far I've just managed them without really thinking about fixing the root cause..
IMO we could also just pull out the date :D

I checked the source code of panvimdoc, and the date doesn't seem to be easily removable..
(search for TITLE_DATE_PATTERN in that repo)

Could we at least merge this to ignore this CI change? it's very annoying 😬

Hey @bew, sorry for the long time away again, I've been finishing my masters, moving, and getting into a new job, so quite a bit of upheaval :|
I'll try to clear the backlog of your PR's further on the next weekend, hopefully 🤞

As for this one, we're already using my own fork of panvimdoc, so I'll fix that in there (although not today, it's late)
