Fix Docker run script to prevent invalid reference format

• Changed docker_run_params from a multi-line string to a Bash array to ensure Docker sees all arguments correctly.
• Converted docker_devices to an array to handle multiple device files safely.
• Removed the undefined $RUN_MODE variable.

This fix resolves the 'docker: invalid reference format' error when running CPU images.
