Description of change

Full nodes no longer serve JSON-RPC subscriptions over WebSocket. iotax_subscribeEvent and iotax_subscribeTransaction were already deprecated in favour of queryEvents and queryTransactionBlocks, and the indexer never served them.
IotaClient.subscribeEvent and subscribeTransaction keep working through IotaClientGraphQLTransport, which serves them with GraphQL subscriptions.
@iota/iota-sdk: removes the JSON-RPC WebSocket client. IotaHTTPTransport.subscribe now fails with an error that points to the GraphQL transport. The WebSocketConstructor and websocket options are kept as deprecated and ignored, so existing code still compiles.
@iota/graphql-transport: subscriptions no longer fall back to JSON-RPC; a filter that GraphQL cannot express is refused. The README lists the supported subscription filters, and no longer lists subscribeEvent / subscribeTransaction as unsupported.

How the change has been tested

Unit tests updated: the HTTP transport test checks that subscriptions are refused, and the GraphQL transport tests check that unsupported filters and methods are refused instead of falling back.
Formatted with oxfmt. Not type-checked or run locally (dependencies not installed); relies on CI.
ws and @types/ws stay in @iota/iota-sdk's devDependencies although nothing uses them any more, to avoid touching pnpm-lock.yaml without pnpm.
