Can you rebase? Also looks like infer_expression_type calls inside infer_nested_type are similarly buggy. maybe fix those as well while we're at it?

@giospada looks like you are reintroducing the substrait-cpp Git submodule which was previously removed from substrait-python. I don't think you need that module for this PR and could remove it.
