Switch release publishing from PyPI Trusted Publishing (OIDC) to token-based authentication for uv. This aligns the CI to use a repository secret for PyPI uploads.
- Replace uv publish --trusted-publishing always with a step that sets UV_PUBLISH_TOKEN from secrets.PYPI_TOKEN
- Keep build flow unchanged (uv build) and run uv publish with the token
