This brings interesting metrics and traces, but this is also broken in different ways. The package hasn't been updated in a few years now, and it still depends on opencensus which is deprecated. Let's remove this for now, and use https://pkg.go.dev/go.opentelemetry.io/contrib/instrumentation/google.golang.org/grpc/otelgrpc instead if we need to.
